Spooky Crispy Mashed Potato Bites

Upgrade Halloween to a HEALTHY one! Enjoy these satisfying crispy little morsels with a Green Monster Smoothie that even the kids will love! 

Ingredients:
– Russet, white or yellow potatoes, peeled and quartered
– Halloween shaped cookie cutters
– Optional for color: pumpkin puree or a cooked a cooked yam
– Optional decorations: black beans, corn, etc
– Optional for color: purple sweet potatoes for bat shapes

Method:
Boil potatoes until tender, hand mash until smooth or use an electric hand mixer (do NOT use an immersion blender, it becomes too gluey).  Add a small amount of the cooking water or unsweetened non-dairy milk if needed.  You want to use as little liquid as possible to prevent this mash from being too wet. Let cool overnight in the fridge OR if you are scrambling to do this on October 31t – chill in the freezer for 30 minutes.

Line a baking sheet with parchment paper, take a handful of mashed potatoes then flatten as evenly as you can to about 1/4 inch thickness.  Wet your Hallowe’en cookie cutters with water then press into mashed potatoes. While the cookie cutter is still in place, remove excess mashed potatoes from around the cookie cutter.  Repeat for each shape.

Bake at 400°F for 30 or more minutes – until desired crispness. Flipping isn’t necessary, but if you decide to flip, be sure it is browned on the bottom first.

DECORATION IDEAS:
• Use metal or paper straws to cut out eye shapes or use black beans for eyes
• Mash in some pumpkin puree or yams to for your pumpkin shaped potato bites
• Mash in some purple sweet potatoes for your bat shaped potato bites
• Use small piping and ketchup for writing RIP and making blood stains (after cooking)

GREEN MONSTER SMOOTHIE:
To keep your Halloween healthy and prevent sneaking the candy, pair these Spooky Bites with a Green Monster Smoothie:  2-3 cups spinach, 1 cup water, 1-2 frozen bananas and the juice of one lime.  *If this smoothie is for kids, replace the water and lime with orange juice.
